Coconut bread

Coconut bread1 1/2 coconuts grated (fresh coconuts are better, but you can use pre-packaged shredded coconut)3 lbs all purpose flour3 tbsp yeast1/4 cup warm water1 tbsp margarine3 1/2 tbsp sugar3 tsp saltServings: 8Preparation Time: 15 Min.Cooking Time: 45 Min.INSTRUCTIONS FOR COCONUT BREADchip and grate coconuts if you are using fresh coconuts. Add approximately 2 1/2 cups of warm water. Mix well (squeeze out the excess coconut milk from the mixture if you used real coconuts). Dissolve yeast in 1/4 cup warm water, add 1 tbsp sugar and 1 tbsp. Flour, mix well, let rise. Then add remaining ingredients including the shredded coconut and knead until smooth and satiny. If dough is a bit stiff, add a little more coconut milk.
